INGREDIENTS
1 TBSP olive oil
100g ricotta
2-3 eggs
1 sprig thyme (optional)
PROCEDURE
Heat oil in fry pan and add ricotta
Whisk eggs
Pour eggs in and around ricotta
Reduce heat to low & cook until eggs are just cooked
Garnish with Thyme & serve
