INGREDIENTS
3 portobello mushrooms
3 cherry tomatoes, halved
1/2 zucchini
1/2 red onion
1/2 leek
2 leaves of kale (or silverbeet)
1 tbsp olive oil
small handful sunflower seeds
PROCEDURE
Heat pan on stovetop on medium heat.
While pan is heating chop the veg.
Add mushroom, onion & leek to pan, drizzle with olive oil and stir.
When mushrooms are soft add zucchini, tomatoes and kale stir (approx. 2 minutes).
Salt & pepper to taste and serve!
