VEGGIE BOWL

INGREDIENTS

  • 3 portobello mushrooms

  • 3 cherry tomatoes, halved

  • 1/2 zucchini

  • 1/2 red onion

  • 1/2 leek

  • 2 leaves of kale (or silverbeet)

  • 1 tbsp olive oil

  • small handful sunflower seeds

PROCEDURE

  1. Heat pan on stovetop on medium heat.

  2. While pan is heating chop the veg.

  3. Add mushroom, onion & leek to pan, drizzle with olive oil and stir.

  4. When mushrooms are soft add zucchini, tomatoes and kale stir (approx. 2 minutes).

  5. Salt & pepper to taste and serve!
