INGREDIENTS
4 eggs
1 hand full baby spinach
5 cherrie tomatoes chopped
1/4 red onion, chopped
large handful of grated tasty cheese
olive oil
PROCEDURE
In a large pan heat oil on stovetop
Saute onion until translucent, then add spinach & tomatoes
Whisk eggs and pour into pan (turn head to low)
When eggs are almost cooked sprinkle cheese over the top and cook until melted
Serve & enjoy!
