ROCKET, PEAR & PINE NUT SALAD

INGREDIENTS

  • 1 chicken breast

  • i pear, sliced into thin pieces

  • 1/4 pumpkin, chopped into bit sized pieces

  • 1 large hand full of rocket leaves

  • 1/2 avocado

  • 1/4 cup pine nuts

  • balsamic

  • olive oil

PROCEDURE

  1. Preheat oven to 180 degrees celsius

  2. Place chicken and pumpkin on baking tray, drizzle with olive oil and cook for 40 mins (approx.)

  3. Meanwhile, in a pan on stovetop, toast pine nuts in olive oil. Sir continuously so as they don’t burn

  4. Once chicken is cooked, slice into pieces

  5. Serve rocket, pear, and avocado in bowl. Place chicken & pine nuts on top and drizzle with balsamic

  6. Enjoy!
