BURRITO BOWL

INGREDIENTS

  • 500g beef mince

    1 onion (diced)
    2 garlic cloves (minced)
    1 tbsp chilli powder 1 tsp ground cumin 1 tsp paprika

    1 tsp dried oregano

  • Roasted sweet potato:

    2 sweet potatoes (peeled and diced) 2 tbsp olive oil

    juice of half a lime

    2 tsp chilli powder

    1/2 tsp cumin

    1 avocado sliced

  • Salsa:

    1 cup cherry tomatoes (halved)
    1 cup red capsicum Diced)

    1 spring onion (sliced)

    1 cucumber (chopped)

    1/4 cup fresh
    coriander (chopped)

    Juice of half of lime
    2 tbsp olive oil
    2 garlic cloves
    (minced)

PROCEDURE

  1. Preheat oven to 200 degrees. Toss potatoes in oil, lime juice, chilli and cumin.

  2. Place potatoes in oven and roast for 25 minutes.

  3. Heat a drizzle of olive oil in a fry pan on stovetop. Cook onion and garlic for approx. 1 min. Add mince meat and cook until browned (approx. 6 mins).

  4. Add cumin, paprika, chilli powder & oregano. Stir and cook for another 3 minutes.

  5. In a bowl combine all ingredients for salsa.

  6. Serve in a bowl topped with avocado & enjoy!
