INGREDIENTS
500g beef mince
1 onion (diced)
2 garlic cloves (minced)
1 tbsp chilli powder 1 tsp ground cumin 1 tsp paprika1 tsp dried oregano
Roasted sweet potato:
2 sweet potatoes (peeled and diced) 2 tbsp olive oil
juice of half a lime
2 tsp chilli powder
1/2 tsp cumin
1 avocado sliced
Salsa:
1 cup cherry tomatoes (halved)
1 cup red capsicum Diced)1 spring onion (sliced)
1 cucumber (chopped)
1/4 cup fresh
coriander (chopped)Juice of half of lime
2 tbsp olive oil
2 garlic cloves
(minced)
PROCEDURE
Preheat oven to 200 degrees. Toss potatoes in oil, lime juice, chilli and cumin.
Place potatoes in oven and roast for 25 minutes.
Heat a drizzle of olive oil in a fry pan on stovetop. Cook onion and garlic for approx. 1 min. Add mince meat and cook until browned (approx. 6 mins).
Add cumin, paprika, chilli powder & oregano. Stir and cook for another 3 minutes.
In a bowl combine all ingredients for salsa.
Serve in a bowl topped with avocado & enjoy!
