INGREDIENTS
5 eggs
2 spring onions (finely chopped)
1/2 zucchini (grated)
1 red capsicum (diced)
50 mls milk (I use coconut)
1/2 tsp thyme
salt & pepper
olive oil
PROCEDURE
Preheat oven to 180 degrees celsius
Mix onions, zucchini & capsicum together in a bowl
Mix eggs, milk, thyme and salt and pepper in a bowl.
Oil muffin tray with olive oil. Divide the vegetable mix into 9 parts of the muffin tray & bake in the oven for 3 minutes.
Remove muffin tray from oven and add egg mixture (approx. 3 quarters full)
Bake in oven for approx. 10 minutes or until egg is set
