INGREDIENTS
1 large cauliflower
1 can coconut milk
1 Onion
2 tbsp olive oil
1 tsp cumin (optional)
PROCEDURE
Preheat your oven to 220 degrees celcius.
Chop the cauliflower into florets and chop the onion in half (leaving skin on).
On a baking tray spread the cauliflower and onion, drizzle with oil & cumin, mixing well.
Bake for 30-35 minutes.
Transfer Cauliflower and onion to a blender/food processor (Don't forget to remove the onion skin)!
Poor in coconut milk and blend (you may need to do this in batches).
Transfer to a large pot on stovetop and add salt and pepper to taste.
