INGREDIENTS
1 TBSP olive oil
2 medium leeks, chopped
4 cloves garlic, minced
1 zucchini, chopped
1 bunch parsley
2 stalks celery
1 broccoli head, chopped
2 L veg stock or broth
400g cannellini bean can, drained
250g spinach
PROCEDURE
Heat oil in pot, add leeks, garlic, broccoli & celery. Cook for 10 mins to soften
Increase heat and add beans, pour over stock and cook for 5 minutes
Add spinach and parsley & cook for further 5 mins
Blitz until smooth
