INGREDIENTS
1/2 cup cooked quinoa (see my ‘Perfect Quinoa’ recipe for how to cook your quinoa)
1/2 cup baby spinach (chopped)
1/2 cup chopped cherry tomatoes (halved)
1/3 cup red onion (diced)
1 ripe avocado (sliced)
1/3 cup fetta
2 tbls lemon juice
2 tbls olive oil
1/2 tsp salt
PROCEDURE
Place quinoa, spinach, tomatoes, onion, avocado & fetta in bowl and mix
In a small bowl whisk together lemon, olive oil & salt
Pour dressing over salad when you are ready to serve.
